Try This: Strawberries and Cream Popsicles for Canada Day!
Cool off and take advantage of all the amazing fresh strawberries with these simple strawberries and cream popsicles!
- 3 cups of fresh strawberries
- 1 can full fat coconut milk
- ½ tablespoon vanilla extract
- 3 tablespoons honey
- Puree strawberries and 1 tbsp of honey in a food processor, set aside.
- In a bowl, combine coconut milk, vanilla extract, and 2 tbsp of honey.
- Fill your popsicle molds, alternating between the strawberry puree and the coconut mixture, until the molds are filled.
- Freeze until frozen (of course…), about 5-8 hours. Enjoy!

In Season Now: Garlic Scapes
Garlic scapes are the most delicious and versatile seasonal garlic product. They differ in shape, size and flavors just like bulbs – BC Garlic Growers brings 4 varieties to the market! They can be used in stir fry, soups, stews and chopped up in salads as well as for making crunchy garlic pesto. Garlic scapes have a very short growing season, available only late June until early July – grab them this Wednesday before they’re gone until next year!
Garlic Scape Chutney
3/4 cup chopped garlic scapes, tops removed
1/2 cup fresh mint packed
1/2 cup roasted almonds
1/2 tsp kosher salt
1/2 tsp black pepper
1/2 jalapeño or serrano pepper
1 tbsp lime juice
1/3 cup olive oil
Place all the above ingredients in a food processor and pulse until uniformly granular. Enjoy as a condiment for savory dishes or as a sandwich spread!

Never Tried Garlic Scapes?
Garlic scapes are the curly tendrils of the garlic bulb plant – cutting them off helps the plan to focus growing energy on the bulb. They’ve gained a bit of a cult following and local garlic fans look forward to their appearance at the market each spring/summer.
As Abdul from BC Garlic says, “Garlic scapes are the most versatile vegetable – anything you can do with any other vegetable, you can do with garlic scapes”. We agree – try them pickled, chopped up in fried rice, stir-fried with other favourite veggies, sauté them, make pesto or use them to season dishes as you would garlic (with a milder flavour).

Product Features – Raspberries and Fresh Sockeye
This week at least two farms will have their first week of raspberries! Both in Abbotsford and family run, Paul’s Produce and Fresh Quality Produce will have some. Not sure how fast they’ll sell out, so come early!
Blue Comet Seafoods will be bringing fresh sockeye fillets from the Nass Region this weekend. Skippers Tony and Sasha have been selling at the Vancouver Farmers Markets for over 10 years and have been fishing for a combined 75 years between the two of them!
Opening Day for Riley Park – June 24th
Don’t forget to check out the newest market, Riley Park, across the street from the Nat Bailey winter market location. Saturdays, 10am-2pm, this weekend will have opening day festivities at 10am including cake!
