Recipe of the Week

It’s rhubarb season in full swing! Check out these Rhubarb and White Chocolate Blondies:

 
Ingredients:
  • 1 pound rhubarb, trimmed and chopped into 1-inch pieces
  • 2 tablespoons granulated sugar
  • zest of 1 lime
  • 1/2 cup (1 stick) unsalted butter
  • 1/2 cup packed dark brown sugar
  • 1/3 cup granulated sugar
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 1 cup all-purpose flour
  • 2 teaspoons ground cinnamon
  • 1 teaspoon kosher salt
  • 1 1/2 cups white chocolate chips, divided into 1 cup and 1/2 cup portions
