In Season: Berry & Banana Granola Cups

Berry & Banana Granola Cups

Ingredients:

Makes 9 cups

  • 1.5 cups rolled oats
  • 1/2 a cup roughly chopped nuts (we used cashew nuts)
  • 1/4th cup roughly chopped seeds(we used a blend of sunflower seeds & pumpkin seeds)
  • 2 overripe bananas
  • 1/3rd cup honey/maple syrup
  • 1/4th cup melted coconut oil/butter
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1/4th tsp nutmeg
  • 1/2 tsp vanilla extract

Directions:

Set a baking tray in the middle rack of the oven. Preheat the oven to 325 F.

Start by mashing the overripe bananas in a bowl, add the honey, melted coconut oil, vanilla extract, spices & salt to the bowl, mix well.

Add the dry ingredients: oats, nuts, seeds and mix till combined.

Grease a muffin tin super well with coconut oil or butter (if it’s not greased well the cups will stick to the tin).

Scoop out equal portions of the granola mixture into 9 sections of the tin and press down either using a greased spoon or 1/4th measuring cup to form a cup shape.

Bake in a preheated oven for 20-25 minutes or unit the edges of the cup are golden brown.

Take out of the oven & cool for 5 minutes.

Add in the yogurt, berries & some chia seeds & serve fresh!
