It’s holiday season and while there are so many things that make us feel happy this time of the year, nothing can beat a good cookie! So Geneviève from Le Meadow’s Pantry shares with us some of the most amazing cookie recipes.

Chocolate Raspberry Rose Cookie

We need –

  • 1 c butter
  • 1 ¼ c sugar
  • 2 large eggs
  • 2 ¼ c flour
  • 1 tsp baking soda
  • ¾ c cocoa powder
  • Sea salt
  • 1 ¾ c chocolate chip, mini
  • Raspberry and Rose Jam from Le Meadow’s Pantry

Beat butter and sugar. Add egg.
Mix flour, cocoa, baking soda, salt. Mix gently. Add chocolate.
Add butter, sugar and egg mixture and mix gently.

Form a little ball with 1 ts, make a dent in the center with your thumb. Bake 5 min, 350F.
Press the center again with your thumb, bake another 5 minutes.
Fill with jam and transfer to a cooking rack.

Lemon cookie with marmalade

We need –

  • 1 ½ c flour
  • 1 ½ tsp baking powder
  • Salt
  • ½ c +2 tbs butter
  • 1 c sugar
  • Vanilla extract
  • 2 tbs lemon zest
  • ¼ c fresh lemon juice
  • Orange or grapefruit marmalade from Le Meadow’s Pantry

Sift together flour, baking powder and salt.
In a different bowl, beat together butter and sugar, add vanilla, lemon juice and zest and continue to beat until smooth.
Add to flour mixture and mix until well blended.
Roll 1 tsp of dough into little balls then flatten slightly with palm of your hand. Cook 8-10min 350F.
Add ½ tsp marmalade on top of each cookie when still warm, transfer to cooling rack.

And the easiest and prettiest…

Birds nest cookie

We need –

  • 1 ½ c butter
  • ¾ c sugar
  • Vanilla
  • 3 c flour
  • 3 eggs separated
  • Unsweetened coconut flakes
  • Cream butter and sugar.

Whisk egg yolks with vanilla in a separate bowl. Add egg yolks to creamed butter, add flour and mix.
In a small bowl, lightly whisk egg white. Use 1 teaspoon of dough and roll into a little bal.
Dip into egg white and then coconut.
Make a dent in the center with your thunb.
Bake 10 min 350F. Press the center again with your thumb. Bake another 8min.
Fill with Strawberry and Balsamic Jam, Apricot Jam or Raspberry Rose Jam from Le Meadow’s Pantry.
Transfer to a cooling rack.
