In Season: Kimchi Soup

Kimchi Soup
Ingredients (in approximate grams):
- 400 g kimchi
- Cooking oil
- 100 g your choice of meat or tofu
- Salt
- 1 green onion
- Rice, if desired
Instructions:
- Chop up approximately 400 grams Kimchi
- Heat up a small pot
- Add a small amount of cooking oil
- Drop in the chopped Kimchi and stir
- Add approximately 100 grams of your choice of meat
- Continue stirring until the meat is well done
- Pour in one and a half cups of water
- Cover the pot until boiling
- Add chopped sausage and/or small cubes of tofu
- Add salt, if desired
- After boiling, turn down temperature to medium and let simmer for a few minutes
- Chop a green onion into four or five pieces and add those
- Goes well when paired with rice
