How to cook with Kimchi: Kimchi Soup


In Korean cuisine, kimchi is not only a condiment or pickle; it is also used as an ingredient in many cooked dishes! This hearty winter dish comes from Ms. Lee’s Natural Foods, makers of local authentic kimchi that is packed with probiotic benefits. Ms. Lee’s Natural Foods started vending with VFM this summer and will be present at the Riley Park Winter Market throughout November and December.

Kimchi Soup

Ingredients (in approximate grams):

  • 400 g kimchi
  • Cooking oil
  • 100 g your choice of meat or tofu
  • Salt
  • 1 green onion
  • Rice, if desired

Instructions:

  1. Chop up approximately 400 grams Kimchi
  2. Heat up a small pot
  3. Add a small amount of cooking oil
  4. Drop in the chopped Kimchi and stir
  5. Add approximately 100 grams of your choice of meat
  6. Continue stirring until the meat is well done
  7. Pour in one and a half cups of water
  8. Cover the pot until boiling
  9. Add chopped sausage and/or small cubes of tofu
  10. Add salt, if desired
  11. After boiling, turn down temperature to medium and let simmer for a few minutes
  12. Chop a green onion into four or five pieces and add those
  13. Goes well when paired with rice
