We’re thrilled to announce that SFU City Conversations will visit Downtown Farmers Market on Thursday, September 21st! This special edition of City Conversations takes place at 12:30 PM as part of SFU Market Day, an event to convene SFU students, staff, and the broader downtown community around a celebration of local food.
Locally grown and produced food is fresher, often better tasting, and sometimes even more nutritious than produce that has been shipped from around the world. But what does it take to get this fresh local produce, meat and seafood to your table? Want to grow your own food but aren’t sure how to begin? Wondering if our exceptional agricultural land is being used to its full potential? Interested in how Vancouver is protecting itself from international food disruption and increasing food prices?
Joining us for the conversation is Richmond Councillor Harold Steves, co-founder of the Agricultural Land Reserve; and Lisa Giroday, co-founder of Victory Gardens. They will help us frame the issues, and then it’s time for you to ask your questions, express your opinions, make your observations. It’s a conversation!
City Conversations runs from 12:30 to 1:30, but we recommend showing up early to take in all the market has to offer and guarantee yourself a seat.

Recipe of the Week: Pan Seared Salmon with Blueberry Reduction
4 (6-oz.) wild salmon fillets, skin on – from Blue Comet Seafood
2 tbsp. coconut oil
¼ cup chicken broth
¼ cup dry white wine
salt-free garlic powder
2 tbsp. shallots, minced
freshly ground black pepper
1 cup fresh blueberries
- Pat salmon dry with paper towels. Season with freshly ground pepper and garlic powder.
- In skillet over medium heat, warm oil. Place salmon in skillet with skin side down and cook for two minutes. Flip salmon and cook for two additional minutes (or longer if preferred).
- Transfer salmon to a plate and tent with foil.
- Add shallots to skillet and cook for 30 seconds. Stir in broth and wine and bring to a simmer, using spatula to scrape up browned bits.
- Add berries; mash with spatula.
- Remove skillet from heat and let mixture cool slightly. Pour mixture into food processor and puree.
- Spoon mixture on top salmon and serve with your favorite fresh veggies

RECIPE OF THE WEEK:
This recipe for celery and cashew nut soup combines the subtle flavour of celery with the nuttiness of cashew.
1 medium sized onion, peeled and chopped
1 medium sized potato, peeled and chopped
1/2 head celery, wash, remove leaves and chop
2 tablespoons butter
3 tablespoons broken cashew nuts
1 1/4 pints vegetable stock
3/4 pint milk
seasoning to taste
Melt the butter in a large saucepan.Saute the prepared vegetables gently until the onion is transparent. Add the cashews and continue cooking for 5 minutes, stirring frequently. Add the stock, bring to the boil, cover and simmer for 20 minutes.Add the milk and allow to cool slightly.Blend in a blender.Reheat to serve and add seasoning to taste.
Yield: 4 portions
